Introduction

The dried fruit market continues to grow signicantly, due to the increasing awareness of nutritional benefits and convenience of dried fruits. Dried fruits are the fruits from which original water has been removed through natural sun drying or other processes. In general, dried fruits contain antioxidants and fiber that are beneficial for health. Some dried fruits, such as cranberries or craisins, have sugar added, which improves flavor but makes them far less healthy than the raisin family.
