Advancing Dairy Fat Analysis with CEM

Since its founding in 1978, CEM has been a pioneer in dairy analysis, continuously developing innovative technology to improve fat and moisture testing. What started with the delivery of its first moisture analyzer to cheese producers has grown into a global company with over 60 subsidiaries and dealer partnerships, committed to advancing analytical solutions for the dairy industry.

Fat analysis has evolved significantly since the Soxhlet Test of 1879, with methods like the Babcock and Gerber tests following soon after. The introduction of Near-Infrared (NIR) and Nuclear Magnetic Resonance (NMR) technology has propelled the dairy industry toward faster, more accurate fat measurements, providing consistent results that are essential for quality assurance. Recognizing the need for even faster, more reliable testing, CEM launched the Oracle System in 2016. This advanced technique allows us to sharpen the peaks of hydrogen protons, specifically those in lipid molecules, and achieve a direct fat measurement. This system also uses fixed response NMR to normalize the signals across different types of fats, from short-chain to unsaturated, resulting in a total fat measurement. This groundbreaking solution provides precise, solvent-free fat analysis in seconds, combining the accuracy of traditional methods with the efficiency of modern technology—helping dairies and testing laboratories streamline workflows like never before.
